イタリアンレストランが密集するスミニャックに、新しい風雲児が登場しました。

Evo（イーヴォ）とは「エクストラバージンオリーヴオイル（Extra Virgin Olive oil）」の頭文字から来ています。それ自体、イタリア料理に多く使われる素材であり、またこれなくして成り立たないイタリア料理の根幹といえるものです。

イーヴォのメニューで目を引くのが、新鮮な素材を使った料理がシグネチャーメニューとして並んでいることです。

• 生ハム・サラミ（SALU MERIA）：スペイン産３歳豚のイベリコハム（Spain, Iverico, 3 years aged Pata Negra Belotta）、イタリア産辛いサラミソーセージ（Italy, Salsiccia Picante）、バリ産の塩漬けポークスパシーサラミ（Artisan Bali, Sopressata）
• 冷製シーフード（FRUTTI DI MARE）：真牡蠣、海老、ロブスター、蟹のザ・タワー（The Tower with Pacific Oysters, Giant poached Prawns, Lobster and Crab "shot" cocktails,
• たたきまたは刺身（CRUDO）：和牛テンダーロイン（Tenderloin of Wagyu Beef）、マグロ（Red Tuna）、ハマチ（Jack Fish）

また、例えばサラダ（INSALATA）はすべて100％有機野菜を使用しており、こうしてみると、素材にとことんこだわったシェフのポリシーが伝わります。

ニューヨーク高級レストラン出身のシェフは、今回イーヴォをオープンするにあたり、「禁煙席を設けること」、「エアコンの効いたテーブル席を作ること」と、料理だけでなく店舗内装にまで注文を出しました。レストラン自体は、戸外のオープンエアーテーブルもあるのですが、こうした食べる環境にまでシェフが気を配るレストランは、スミニャック界隈では非常に珍しいといえるでしょう。

メイン料理として「地中海風香味ラム包み（Mediterranean spiced lamb wrap )」、付け合わせとして「じっくり調理した雌鳥のクロストーネ、黒トリュフクリーム（Slow cooked hen crostone, black truffle panna）、「ライスコロッケ（Arancine alla Bolognese）や、「ちっちゃなパスタ（un Po di Pasta）」、「ニンニクとタイムを使った茸とポルチーニのソテー（Pappardelle porcini trifolati, parsley, olive oil, garlic & thyme）」等、イタリアンを知り尽くした献立に仕上がっています。そして料理の値段がこなれているので、お腹いっぱい気持ちよく食べることができます。ワイン、カクテル、ソフトドリンク等アルコール＆ドリンクリストも充実しています。

オープンスタイルの店内は、ヒップなインテリアが目を引き、プールを眺めるテーブルセッティングは「ハレ」の日のダイニングにまさにぴったりです。

Evoという言葉は、英語のイボーク（引き起こす、Evoke）、エボリューション（進化、Evolution）等に使われるように、革新性を表す単語でもあります。

There's a new star in Seminyak and it's the latest Italian restaurant called EVO.

EVO restaurant at Sentosa Private Villas and Spa, Bali is a casual, energetic Italian-styled taverna serving ingredient driven, soul-satisfying riffs on Italian-Mediterranean cuisine, where you can celebrate the simple pleasures in a welcoming, sophisticated and modern oasis. EVO stands for Extra Virgin Olive oil (as well as EVOlution) and fresh ingredients, organically grown vegetables and extra virgin olive oil combine to create some wonderful signature dishes:

• Salumeria – a selection of cold cuts including Pata Negra Belotta (3 year aged ham leg), Chorizo Iberico Extra (dry cured spicy pork sausage), Lomo Iberico Extra (dry cured pork loin), Bresaola di Punta (air dried beef), Salsiccia Picante (spicy air cured sausage), Salami Felino (dry cured pork and beef with black pepper) and Sopressata (dry cured and pressed spicy ham sausage).
• Frutti di Mare "Chilled Shellfish" including "The Tower" - Pacific oysters, giant poached prawns, lobster and crab "shot" cocktails.
• Tataki or Sashimi such as "Crudo" (Tenderloin of Wagyu Beef, Red Tuna and Jack Fish).

Hailing from the world class restaurant scene of New York, EVO's Executive Chef has successfully managed to create a unique dining experience in the centre of Seminyak. An air conditioned and no-smoking section has been designed with luxurious private dining booths, which is balanced with an open plan area and poolside island bar. And it's not just the décor that's fantastic! One of EVO's signature dishes is a delicious Mediterranean Spiced Lamb Rack complimented by side dishes such as slow cooked hen Crostone and Black Truffle Panna; Arancine alla Bolognese (breaded and fried rice balls) or a wide selection of pastas including Pappardelle Porcini Trifolati, Agnolotti, Tagliatelle, Cannelloni and of course authentic pizzas cooked in a wood fire pizza oven.
